How the market works
Demand side

Certified and about-to-be-certified food companies: owner’s name, email, phone and certification number. A recent certification means another testing or audit need is probably coming.

Supply side

Food testing labs, auditors and certifiers.

A food company cannot sell without proof that the food is safe. That means lab tests, audits and certifications, and it recurs with every new batch, renewal and re-inspection. Money keeps leaving the food maker for the safety company for as long as the maker sells food.

Safety companies want customers but nothing tells them which food maker is about to need them. Food makers can search for forty labs and still not know which can test their product. Choosing the wrong one delays the launch.
